Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery knives found anywhere. His heat treatment techniques, combined with his choice of steels, results in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
Paring knives are a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
This special knife is hand forged from W2 carbon steel and was heat treated using a traditional Japanese technique known as honyaki. Honyaki knives are forged from a mono-steel and heat treated like a Japanese sword. The spine is coated with clay prior to quenching. This insulates the top of the blade and results in a keen, hard cutting edge with a soft, supportive spine. Honyaki takes more skill to forge and shape than other techniques. The result, however is a knife with some of the greatest edge holding found anywhere. Burke's maker's mark is hand engraved into the left side of the blade.
The bolster is integral to the blade. Integral bolsters have superior structural integrity but require a particularly talented smith to make one in a custom setting. The bolster is contoured to encourage a comfortable pinch grip, though the handle is also exceptionally comfortable when held further back.
The handle is formed from extremely rare high Arctic muskox horn. Muskox horn is one of the most rare and majestic handle materials used in the knife world. The highly polished horn has a unique grain structure that immediately grabs the eye. It is nicely contoured to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the beak at the end of the handle. The handle combines a polished surface with hints at the natural texturing of the horn. Muskox horn, which is quite resilient, is a perfect choice for use in either a home or commercial kitchen. Handle scales are set in place with three stainless steel hidden bolt rivets.
