The nakiri is a traditional Japanese knife ideal for chopping fruit and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. Whether chopping onions, mincing garlic, or slicing tomatoes, this knife will be a perfect choice and this chef's knife is sure to become a kitchen favorite.
The W2 carbon steel blade borrows its heat treatment technique from the world of razor sharp Japanese swords -- a traditional Japanese clay zone heat treatment. This technique, known as honyaki, produces some of the longest lasting edges found anywhere. The ultra-hard edge steel is supported by the softer spine. The dramatic heat treatment line (called a hamon) shows the transition between the soft and hard steel. A hand rubbed satin finish lends an heirloom quality. To avoid rust and oxidation, we recommend using camellia oil.
The handle is formed from amboyna burl (Pterocarpus indicus). This dramatic wood combines red heartwood with yellow sapwood in a swirling figure. A central resin spacer adds nice contrast. This Japanese-inspired handle features octagonal facets at the top and a rounded base. It is extremely comfortable. By using stabilized woods, Edward ensures this knife will hold up well to the high demands of either a professional or home kitchen.
