Description: I was very excited when I was introduced to Dan Bidinger at 2019 Blade West in Portland, OR. Though Dan didn't have a table, his work spoke for itself. Bidinger brings a tremendous amount of skill, precision, and design to his knives.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The blade is well suited for slicing vegetables, meats, and more. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 10 inches, it is a perfect size for either the professional or home chef. This chef's knife combines ultra-high performance with the easy care of stainless steel.
The blade is formed from high performing AEB-L stainless steel. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. AEB-L was developed for razor blades with a very fine grain structure making it easy to sharpen while maintaining good edge holding capabilities. The thin flat grind provides a very efficient cutting geometry with good food release. The spine and choil are nicely rounded for a comfortable grip.
The handle is formed from a beautiful section of presentation grade stabilized maple burl. Showing Dan's skills at his best, he constructed this handle using hidden hardware. Around nine pins on the inside of the handle secure the scales to the full tang. This allows the beautiful scales to show off the wood's figure without the interuption of pins or rivets. This is a time consuming and difficult process that few makers attempt. Facets throughout the handle provide an elegant look and an extremely comfortable grip. The handle is equally comfortable in a pinch grip or a standard grip. Black paper Micarta liners provide an elegant contrast to the maple burl scales. This is a knife you won't want to put down!
