Description: I was very excited when I was introduced to Dan Bidinger at 2019 Blade West in Portland, OR. Though Dan didn't have a table, his work spoke for itself. Bidinger brings a tremendous amount of skill, precision, and design to his knives. Since then, I've followed Bidinger's work, which has continued to excel.
This beautiful breaking knife is the right tool for a few key kitchen chores — filleting, and general butchery work. The Butcher's Breaking Knife is designed to cleanly and confidently divide large cuts of meat, such as whole loins and shoulders, into smaller portions. It is also the preferred shape for filleting salmon and other large fish. The narrow, sharp, curved blade gets in close to the bone, making it easy to separate meat from bone. The extremely sharp edge even cuts through fibrous material with ease. It's perfect for trimming the silverskin from a tenderloin or even making your own cutlets. The 9 inch length is perfect for large fish such as king salmon or portioning large cuts of meat. The narrow blade reduces drag as you cut against the meat, so cutting is fast and easy.
The blade is formed from high performing AEB-L stainless steel. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. AEB-L was developed for razor blades with a very fine grain structure making it easy to sharpen while maintaining good edge holding capabilities. The flat grind provides a very efficient cutting geometry. The spine is nicely rounded for a comfortable grip.
Bocote (Cordia spp.) scales are secured to the full tang using brass colby hidden bolt rivets. The handle is beautifully shaped for a secure comfortable grip. Red paper Micarta liners add an elegant contrast to the natural wood scales.
