Description: This exceptional chef's knife is the work of Argentinian knifemaker Pablo Untroib. Pablo lives in Buenos Aires. He specializes in knives for professional and amateur cooks as well as making outdoor knives.
Chef's knives are the general purpose knife in the kitchen. From slicing tomatoes to chopping onions, this knife will get the task done perfectly. The 7.2" blade is a perfect size for most any task. Cocinero 180, is Untroib's general purpose 7.2" chef's knife. This is the third evolution of this design, based on years of use by both amateur and pro cooks.
The blade is formed from O2 carbon steel. At Hrc 60, it will have a keen, long lasting edge. An elegant forced patina provides limited rust resistance and helps you get comfortable working with carbon steels. Because this knife is made from carbon steel, we recommend camellia oil to avoid rust and oxidation. The blade has a perfect arc for a rocking chop.
Quartersawn Argentine Lignum Vitae (Bulnesia sarmientoi) wood handle scales are set on the full tang for strength and durability. This wood is also known as palo santo (holy wood). This rare wood has similar properties and uses to "true" lignum vitae, combining tremendous strength and durability. Its interlocking "boar's bristle" grain combines light brown and green tones. The interlocking figure is particularly dramatic. The domed handle is nicely contoured so that it fits most hands.
The knife is accompanied by a veg tanned leather sheath custom built and tooled by Pancho Elizalde.
This is an exceptionally light, very well balanced chef's knife that can be used for hours without fatigue. It is a perfect choice for both home and commercial chefs.
