Description: Florida knifemaker Edward Ratanun (Edward R Knives) creates a spectacular chef's knife. His sense of design is only matched by his skill of implementation. This utility knife, inspired by the high performance knives of Japan, is a prime example of Edward's clean work.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The W2 carbon steel blade was heat treated using a traditional Japanese clay zone heat treatment. This technique, known as honyaki, produces some of the longest lasting edges found anywhere. The ultra-hard edge steel is supported by the softer spine. The dramatic heat treatment line (called a hamon) shows the transition between the soft and hard steel. A coffee etch darkens the blade and provides some limited rust resistance. The spine and choil are nicely rounded for comfort.
The Japanese-inspired handle is formed from ebony (Diospyros crassiflora). This dark toned wood is among the densest woods found anywhere and is highly desirable for its jet black appearance. The handle meets perfectly with a dyed and stabilized maple burl ferrule. Black and purple G10 spacers add a touch of contrast and will help the natural woods adjust to humidity and temperature changes. This is a knife that you won't want to put down!
