Description: Oregon bladesmith Joe Edson specializes in straight razors and kitchen knives. As such, it's not surprising that his high performing chef's knives are razor sharp! I have watched Joe's work develop over the last couple of years and the knives he is creating are truly exquisite! This beautiful paring knife could easily because a family heirloom that will last for generations to come!
You can think of the paring knife as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though Joe shaped this paring knife to give it plenty of clearance over a cutting board so it can be easily used for chopping small foods, such as garlic cloves or ginger or even have it double as a soft cheese knife.
The blade was forged in a technique known as san mai (three layers). Undulating, brightly colored mokume (forged from brass, copper and stainless steel) surround a V-Toku2 carbon steel core. V-Toku2 is a 'super-steel' created by Takefu, in Japan. Very high in carbon content (approx. 1.1%) this steel holds and takes an amazing edge. The effect created by the mokume gane walls is extremely captivating! The flats of the knife are forge finished. The spine and choil have been nicely rounded for comfort. The blade has a slight hollow grind to help facilitate food release and resistance-free slicing.
The handle combines stabilized and dyed purple snakeskin sycamore (Platanus occidentalis) with a deer antler spacer. Black fiber spacers help the natural materials adjust to humidity and temperature changes in the kitchen. The contoured handle provides a secure ambidextrous and comfortable grip. This is sure to be one of your go-to knives!
