Description: Oregon bladesmith Joe Edson specializes in straight razors and kitchen knives. As such, it's not surprising that his high performing chef's knives are razor sharp!
The nakiri chef's knife is a traditional Japanese knife ideal for chopping and slicing fruits and vegetables, as well as boneless meats. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. The nakiri chef's knife is a tremendously versatile kitchen tool. Whether slicing onions or julienning carrots, once you try one of Edson's nakiri, you'll wonder what you ever did without it.
Joe began by forging a bar of san mai steel to shape. Takefu VToku2 carbon steel is tremendously high performing, with an extremely keen edge. Stainless steel surrounds the carbon steel core to provide easier maintenance and care. The top of the blade is forge finished. The sides feature an s-grind to provide great food release and clean slicing. Because this knife is made from carbon steels, we recommend using camellia oil to oil the blade and natural wood handle.
The handle combines stabilized and double dyed curly maple with a ferrule contoured from ivory G10. The combination of materials is extremely engaging! The handle is hand contourted to provide a solid grip and encouraged a comfortable pinch grip. Black and white fiber spacers will help the natural wood adjust to humidity and temperature changes. The handle is so comfortable, you won't want to put this one down.
