This is the place to start your carbon steel knife collection. This custom chef's knife by Joe Edson is a perfect 'go to' knife. It's used for all-around food preparation. This deep bellied chef's knife is a perfect knife to grab whether slicing onions or chopping peppers. The tall profile gives plenty of finger clearance over a cutting board for a rocking chop. The detail oriented tip is perfect for finer tasks. Once you try one of Edson's knives, you'll wonder what you ever did without it.
Joe began by forging a bar of san mai steel to shape. Takefu VToku2 carbon steel is tremendously high performing, with an extremely keen edge. Stainless steel surrounds the carbon steel core to provide easier maintenance and care. Because this knife's core is forged from carbon steel, we recommend using camellia oil to avoid rust. The top of the blade is forge finished. The sides feature an s-grind to provide great food release and clean slicing. Because this knife is made from carbon steels, we recommend using camellia oil to oil the blade and natural wood handle.
The handle combines stabilized and double dyed maple burl with a ferrule carved from black Micarta. This convoluted wood has a beautiful figure. Thin fiber spacers assist the handle to adjust to temperature and humidity changes in the kitchen and a central copper spacer adds a touch of bright color. The right-handed handle is inspired by the D-shape Japanese handles. This knife is so comfortable, you won't want to put this one down.
