This Japanese-influenced chef’s knife is lightweight, has excellent cutting geometry, and is a perfect choice for the chef that prefers a smaller, easier to control knife.
This knife is perfectly suitable as a utility slicing knife or a petit chef's knife. The 5-1/3 inch blade is light and nimble, but the blade has plenty of belly curve to enable rocking cuts, which just adds to its versatility. Whether slicing, chopping, or mincing this will be your go-to knife.
The 5-1/3 inch blade was hand ground from stainless damascus forged by Damasteel in Sweden. The high contrast pattern is immensely captivating and will provide a keen, long-lasting edge. Damasteel stainless damascus ensures exceptional performance without the care needed to maintain damascus forged from carbon steels. The nimble blade is distal tapered, ensuring a perfect balance. Dave's touchmark is on the left side of the blade.
The Japanese-inspired ambidextrous octagonal handle is stabilized corrugata burl. Corrugata burl comes from Australia and has a wild, dense grain that is extremely pleasing to the eye, A black G-10 spacer and stainless steel bolster seal the handle from water. Like other knives, this knife should not be put in the dishwasher.
