Description: I was tremendously pleased to meet bladesmith Dave Skinner at the 2019 Guild Show of Southern Africa. Dave brings a refined eye and tremendous skill at the forge to his knives. Dave makes many different styles of fixed blades and lately he has turned some of his focus into creating high performance chef knives.
This Japanese-inspired chef's knife is a tremendous knife. It is perfect for the chef that prefers a smaller knife that is easier to control. At 5-1/2 inches, it is long enough to get most any task done, yet short enough to mince herbs or chop garlic with ease. At 1.60 inches tall, it has just enough height to be used as a primary chef's knife. It is sure to become a goto knife in your kitchen.
The blade is Bohler N690 stainless steel, created by Bohler in Austria. It takes an incredibly sharp edge and holds onto it. Increased toughness gives it better resistance to edge chipping. The blade features a hand rubbed satin finish. Dave's maker mark is on the left side of the blade.
The ambidextrous Japanese-inspired octagonal handle is made from stabilized and dyed maple burl. Red fiber spacers will help the handle adjust to humidity and temperature changes in the kitchen. The handle is finished with a black Micarta spacer and stainless steel bolster. This is a knife that you won't want to put down!
