Description: Bill Burke, who was honored as a Master Smith June 2008, creates hunting knives and culinary knives. His work is frequently noted as being among the best in the world -- both in his understanding of design and the keen, long lasting edges. His knives are a pleasure to hold and a joy to use.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing and chopping vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. Because this knife is forged from carbon steels, we recommend using camellia oil after use to avoid rust and oxidation.
Burke is well known for his heat treatment, which he developed in conjunction with Mastersmith Ed Fowler. These techniques create some of the sharpest and most long lasting edges found anywhere.
The blade was hand forged from premium 52100 carbon steel. Many knifemakers and users feel that 52100 is among the best, if not the best steel currently used to make modern knives. The blade is triple quenched and triple tempered for optimal edge holding and durability. The blade features an elegant, heirloom quality hand rubbed satin finish. Burke's mark is engraved on the left side of the knife. The right side is engraved with MS (Master Smith). This knife features an integral bolster, sealing the front of the handle from moisture. Creating integral bolsters in a custom knife environment is particularly difficult -- especially with full tang knives. It requires a skill at the forge that is rarely found -- even among the best bladesmiths. Mastersmith Burke has shown his exceptional talent at the forge by creating this knife with an integral bolster and distal tapered full tang. The bolster moves into a Fujiwara-inspired finger groove, making this knife particularly comfortable with a pinch grip.
The handle features exhibition grade ironwood scales heirloom fit to the full tang using three corby bolts. Arizona desert ironwood (Olneya tesota) is a rare wood that is only found in the valleys of the Sonoran Desert below 2,500 foot elevation. It is among the most desirable of exotic woods used for knives and will hold up well to the demands of a professional kitchen. The handle is nicely contoured to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the end of the handle. The knife has perfect balance and feels exceptional in the hand. Like other knives, this knife should not be put in the dishwasher.
