Description: The chef's knife is the primary knife used in the kitchen, easily handling almost all culinary tasks. This 9 inch chef's knife by Dale Miller is light, agile, and very easy to maneuver. There's plenty curve to enable rocking cuts, which just adds to its versatility. Whether slicing, chopping or dicing, this chef's knife is sure to be a favorite in your kitchen!
The blade was hand forged from high performance 52100 carbon steel. Many knifemakers and metallurgists feel that 52100, with its small crystalline size, tremendous edge stability and toughness, is among the best carbon steels used in knifemaking today. Dale brought the steel to 63 Rockwell, ensuring a keen, long lasting edge. A hand rubbed satin finish adds an heirloom quality to the knife. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
The bolster is integral to the blade and will accommodate a comfortable pinch grip. This technique has superior structural integrity and requires a particularly talented smith.
The handle is formed from stabilized Hawaiian Pheasantwood that was milled from a wind downed tree from the Historic Maunawili Queen's Bath on Oahu by Waimanolo Lumber and Milling. The stone bath structure in the ground is large enough to fit 10 people, though Queen Lili'uokalani used the facility alone and it was built specifically for her. Under these trees surrounding the bath, the Queen witnessed an exchange between a man and woman. The two embraced and said goodbye, the sweet parting inspired these famous words: "One fond embrace…until we meet again." These words inspired Queen Lili'uokalani to compose Aloha Oe, Hawaii's most famous song known around the world. The pheasantwood, named after its resemblance to coloration and patterns found on tail-feathers of pheasants has tremendously beautiful figure. Dale brought the handle to a high polish and finished it with Tru-Oil which helps protect the handle and brings out the beautiful figure. The handle is carved to swell at the palm, move into a slimmer waist and swell again at the end of the handle. The handle is finished with African blackwood and artificial ivory spacers. This is a knife you won't want to put down!
