Description: This custom chef's knife was made by Steve Grosvenor (Red Rock Tools) of Beresford, South Dakota. Steve is a Forged in Fire champion (season 4, episode 9) and an American Bladesmith Society Journeyman Smith. He is also a former US Army Airborne Infantry solider and fabricator. Today, he is a full time bladesmith specializing in the high performance forged blade.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for chopping vegetables and slicing meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. At 8 inches, this is among the most popular sizes for a primary chef's knife used by professional chefs. It is large enough to get most any task done, yet short enough to do it with ease.
The blade is a hand forged san mai. The 230 layer damascus core was forged from carbon steels. A 410 stainless steel jacket surrounds the core, making care easier. The combination of the damascus core and stainless sides is exceptionally dramatic. Because this knife is made from carbon steel, it needs to be oiled and dried before being put away. We recommend using camellia oil to oil the blade and tang.
Dyed and stabilized maple burl handle scales are hand contoured. A white G10 spacer assists the wood to adjust to temperature and humidity changes. The stabilized wood handle will hold up beautifully to the demands of either a home or commercial kitchen. It is hand contoured for a particularly comfortable grip. Though this handle is very comfortable held back on the handle, the bolsters are carved to accommodates a pinch grip. Like other knives, this knife should not be put in the dishwasher.
This knife is a tremendous example of Grosvenor's work. It has a nimbleness that will make this knife tremendous for every day use. Excellent work throughout!
