Description: You can think of a paring knife as a smaller version of a chef's knife because, like a chef's knife, paring knives are quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The 3-1/4 inch blade was hand forged from 52100 carbon steel. It is nicely distal tapered for optimal balance. A differential heat treatment and triple quench result in a keen, long lasting edge, with strength and durability for the spine. Many makers and users feel that 52100 carbon steel is among the best, if not the best steel used on knives! Because this knife is carbon steel, we recommend using camellia oil to avoid rust and oxidation. This knife is perfectly balanced and is not one that you'll want to put down.
Rosewood handle scales are set on the full tang with stainless steel pins. The warm toned wood is nicely carved so as to swell at the palm, move into a slimmer waist, and swell again as it approaches the beak.
