Description: Andy Burke is the son of renowned Mastersmith Bill Burke. Over the years, Andy has had the opportunity work with Bill and he has created some truly spectacular knives. Andy's focus on kitchen knives has resulted in some spectacular tools for chefs.
The petit gyuto is modeled after the French pattern chef's knife. Slimmer than the santoku, it is well suited to slicing and chopping -- an ideal general purpose chef's knife. At 6-1/4 inches, the smaller length makes this knife exceptionally easy to maneuver. The slim profile keeps the weight low and the balance perfect. This knife has a perfect shape for a rocking chop and is sure to be a goto knife in your kitchen.
The 6-1/4 inch damascus blade is forged from 1080 and 15n20 carbon steels. The bold twisted Ws pattern is high contrast and incredibly engaging. The spine and choil are rounded for comfort. Andy's maker mark is shown on the left side of the blade. Because the blade is made from carbon steels, we recommend using camellia oil to oil both the blade and natural wood handle.
The ambidextrous traditional octagonal handle combines Macassar ebony with a buffalo horn ferrule. This comfortable handle will last a lifetime. Like other knives, this knife should not be put in the dishwasher.
