Description: Burls & Steel is a husband and wife team based in Charleston, South Carolina working together to create unique, one-of-a-kind knives using old world techniques and adding a touch of modern flair. Ben Spurrier is the bladesmith who creates the knives and his wife Sydney handles the marketing and photography. We were very pleased to meet Ben at Blade Show 2021 and are excited to carry a variety of their high quality work!
This knife is a perfect compromise between a petit chef and a utility knife. It will easily perform a multitude of tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. The blade is just tall enough to give plenty of finger clearance over a cutting board. Utility knives are also sometimes called sandwich knives because they work well on almost everything that goes into a sandwich — from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The 5-1/2 inch damascus blade is hand forged from 300 layers of 1084 and 15n20 carbon steels providing the excellent edge retention and chip resistance that a high performance knife needs. The spine and choil are nicely rounded at the edges to accomodate a comfortable pinch grip. Because this knife is made from carbon steels we recommend using camellia oil to prevent rusting and oxidation.
The Japanese-inspired octagonal handle is made from stabilized black ash burl secured to the tang using a brass pin. A spacer is formed from black & gold TruStone reconstituted stone. The handle is extremely comfortable regardless of holding the knife in a pinch grip or further back on the handle. This is a nimble knife that you won't want to put down!
