Description: Burls & Steel is a husband and wife team based in Charleston, South Carolina. They work together to create unique, one-of-a-kind knives using old world techniques and adding a touch of modern flair. Ben Spurrier is the bladesmith who creates all of the knives and his wife Sydney handles the marketing and photography. This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long blade is well suited for slicing vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. Whether chopping fruits and vegetables, or slicing meats, this chef's knife will do it all.
The 7 inch damascus blade is forged from 125 layers of alternating 1095 and 15n20 carbon steel, providing the excellent edge retention and chip resistance that a high performance knife needs. The spine and choil are nicely rounded to accomadate a comfortable pinch grip. Because this knife is forged from carbon steels, we recommend using camellia oil to avoid rust and oxidation.
The handle is hand contoured from Tasmanian Blackwood (Acacia melanoxylon). Tasmanian blackwood is native to Tasmania and eastern Australia. Although called “blackwood,” the name is somewhat of a misnomer, as its wood is not at all black. Rather, its lustrous golden brown grain and figure is very similar to Hawaiian curly koa. A spacer is formed from reconstituted turquoise made by Tru-Stone. The turquoise spacer is surrounded by alternating brass and G10 spacers. A central mosaic pin finishes the handle. The handle is extremely comfortable whether holding the knife in a pinch grip or holding it further back. This is sure to become your go-to knife in the kitchen!
