Description: Charlie Ellis first struck hot steel in 2005 and has since traveled from Maine to North Carolina in pursuit of the perfect blade. In 2007, he enrolled in the Hand Wrought Metals program at Haywood College in Clyde, North Carolina. There, he learned a great deal from David Burnette, Mastersmith Jason Knight, as well as a host of others through the school's partnership with the American Bladesmith Society. Since 2014, he has been a full time blacksmith living in the mountains of western North Carolina with his wife and son. Lately Charlie has been focusing on forged chef knives and his results have been excellent!
The blade is hand forged from 52100 carbon steel. 52100 is considered by many knifemakers and knife users to be among the best steels ever used for knives. Because this knife is made from carbon steel, we recommend using camellia oil to protect the blade from oxidation. By forging the knife closely to shape, Ellis ensures the knife will have optimal grain structure. The blade features a compound S-Grind. A convex ground edge provides high performance chopping with lots of strength. From there, it moves into a narrow hollow, followed by a broad hollow as the blade moves toward the spine. This technique lightens the overall weight without sacrificing strength. The combination ensures a high performing workhorse with less resistance cutting through foods that would otherwise stick or wedge. Both the spine and choil are nicely rounded for comfort. An integral bolster, while common in production knives, requires tremendous skill in a custom environment. The integral bolster brings weight to the center of the knife.
The handle is hand contoured from black Micarta with red G-10 spacers for contrast. It is faceted to provide a comfortable grip - swelling at the palm, moving into a slimmer waist, and swelling again at the end of the handle. This is a knife you won't want to put down!
