Description: This exceptional chef's utility knife is the work of Argentinian knifemaker Pablo Untroib. Pablo lives in Buenos Aires. He specializes in knives for professional and amateur cooks as well as making outdoor knives.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The blade is O2 carbon steel. At Hrc 60, it will have a keen, long lasting edge. An elegant forced patina provides limited rust resistance and helps you get comfortable working with carbon steels. Because this knife is made from carbon steel, we recommend camellia oil to avoid rust and oxidation.
Arizona desert ironwood handle scales are set on the full tang for strength and durability. White paper Micarta spacers add a nice contrast. The dense, resilent wood handle will easily hold up to the heavy demands of either a home or commercial kitchen. The domed handle is nicely contoured so that it fits most hands.
The knife is accompanied by a leather sheath.
