Description: The chef's knife is the primary knife used in the kitchen, easily handling almost all culinary tasks. This chef's knife is light, agile, and very easy to maneuver. There's just enough belly curve to enable rocking cuts, which just adds to its versatility. Dale built this chef's knife with a narrower blade, resulting in clean cuts and very little suction between the food and knife. Whether slicing, chopping or dicing, this chef's knife is sure to be a favorite in your kitchen!
This chef's knife is the work of Washington native, Dale Miller. Miller's attention to detail shines through this elegant kitchen knife. The blade was hand forged from high performing 26C3 carbon steel. The composition of 26C3 is similar to Hitachi shirogami (white steel). It is very clean with few alloying elements. The high carbon content helps the steel get very hard. Dale borrowed his heat treatment technique from the world of Japanese swords. The spine was coated with clay prior to quenching. The dramatic undulating heat treatment line is called a hamon. It shows the transition between the resilient spine, and the ultra-hard cutting edge. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
The contoured handle is exhibition grade Koa wood (Acacia koa). Koa is widely considered to be the most beautiful of Hawaii's native hardwoods. The highly polished handle has a brilliant chatoyancy that few woods can emulate. An antiqued brass bolster finishes the handle and is sculpted to accomadate a comofortable pinch grip. Like other kitchen knives, this knife should not be put in a dishwasher.
