Description: South African knifemaker David Hoehler specializes in chef's knives. Given that he worked in some of the best kitchens in South Africa for nine years, it is no surprise that he brings a unique understanding the chef's primary tool.
Like a chef's knife, the santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works especially well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the standard chef's knife, a santoku is very easy to maneuver—even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all.
The 6-1/3 inch blade is high performing 14c28N stainless steel. This Sandvik stainless steel was specifically developed as a blade steel. It is a very fine grained alloy, ensuring a keen, long lasting edge. At Hrc 61, it offers a good combination of corrosion resistance, edge stability, wear resistance, and strength. The blade is meticulously flat ground for precise slicing and has a razor sharp edge. A hand rubbed satin finish lends an heirloom quality to the knife. The spine and choil have been nicely rounded for comfort. The distal tapered blade provides perfect balance.
The handle is contoured from stabilized and dyed maple burl secured to the full tang using two stainless hidden bolt rivets. This elegant knife will hold up exceptionally well to the demands of either a home or commercial kitchen. The front of the handle scales are sealed with a 304 stainless steel bolster to prevent food particles from getting into the tang. Like other knives, this knife should not be put in the dishwasher.
