This high performance fillet knife is sure to become a 'goto' knife -- both in the kitchen and when out fishing. This beautiful knife is the right tool for two key tasks — boning and filleting. When boning, the narrow, sharp blade gets in close to the bone, making it easy to separate meat from bone. The extremely sharp edge even cuts through fibrous material with ease. It’s perfect for trimming the silverskin from a tenderloin or even making your own cutlets. The narrow blade reduces drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, the blade's 5.9 inch length is just right to glide through the body of the fish, quickly removing bones and skin. The knife has a slight flex making filleting a breeze.
The blade is high performing CPM S35VN stainless steel. CPM-S35VN is an American-made and developed premium grade stainless steel created especially for knives. It is a powdered metallurgical (PM) steel with a uniform carbide distribution and clean steel properties. This gives the blade superior corrosion resistance, toughness, and edge retention. The high flat grind provides a very efficient cutting geometry. The blade features a hand rubbed satin finish.
The handle is black and gold Raffir Noble. Raffir Noble is a composite material with fine brass and bronze meshes inside. A strong semi-transparent resin fixes the meshes in position and improves the 3D depth effect. Together, this unity of materials has a unique appearance and great strength. The rounded handle is nicely contoured for a secure, comfortable grip.
