Description: South Africa bladesmith Dave Skinner brings an exceptional level of work to his knives. Whether the knife is designed for the kitchen, for use out in the field, or for a collector, Skinner brings a refined eye and tremendous skill at the forge to his knives.
Sujihiki are slicers or carving knives that are well suited for slicing and portioning meats and fish due to the thin, long blade. Extremely sharp, suji are also well suited to preparing sushi and sashimi. The extended blade length allows you to slice with one long stroke, instead of sliding the knife back and forth in a sawing motion. The result is a superior, clean cut.
The blade is hand ground 14C28N stainless steel made by Sandvik in Sweden and heat treated to 60 Hrc. 14C28N is tough, chip, resistant, highly corrosive resistant, and maintains good edge retention. The blade features a hand rubbed satin finish.
Like the blade, the handle is inspired by Japanese knives. The octagonal shape is extremely comfortable. By using stabilized wood, Skinner ensures this knife will hold up well to the high demands of either a professional or home kitchen. The front of the handle is sealed with a stainless steel spacer, followed by black G10.
