A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The blade is hand ground 14C28N stainless steel made by Sandvik in Sweden and heat treated to 60 Hrc. 14C28N is tough, chip, resistant, highly corrosive resistant, and maintains good edge retention. The blade features a hand rubbed satin finish. The K-tip provides a detail-oriented tip.
Like the blade, the handle is inspired by Japanese knives. The octagonal shape is extremely comfortable. By using stabilized wood, Skinner ensures this knife will hold up well to the high demands of either a professional or home kitchen. The front of the handle is sealed with a stainless steel spacer, followed by black Micarta.
