Description: I was very excited when I was introduced to Dan Bidinger at 2019 Blade West in Portland, OR. Though Dan didn't have a table, his work spoke for itself. Bidinger brings a tremendous amount of skill, precision, and design to his knives. Since then, his work has continued to develop. He is creating some of best chef's knives found anywhere.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The blade is well suited for slicing vegetables, meats, and more. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 7-1/4 inches, it is a perfect size for either the professional or home chef. It is easy to control yet has enough reach to get most any job done. At 5 oz, this knife is exceptionally nimble.
The blade is high performing A2 semi-stainless steel. A2 combines high performance with some oxidation resistance. Because this knife is made from tool steel, we recommend using camellia oil to avoid rust and oxidation. The spine and choil are nicely rounded for a comfortable grip. A K-tip provides a detail-oriented tip.
The hand contoured handle is stabilized maple burl. A bolster formed from carbon fiber seals the front of the handle. The handle is equally comfortable in a pinch grip or held further back. This nimble knife has exceptional balance. This is a knife you won't want to put down!
