Description: I was very excited when I was introduced to Dan Bidinger at 2019 Blade West in Portland, OR. Though Dan didn't have a table, his work spoke for itself. Bidinger brings a tremendous amount of skill, precision, and design to his knives. Since then, his work has continued to develop. He is creating some of best chef's knives found anywhere.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The blade is well suited for slicing vegetables, meats, and more. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 9 inches, it is a perfect size for either the professional or home chef. It is easy to control, yet has enough reach to get most any job done.
The blade is high performing 80CrV2 carbon steel with a hand rubbed satin finish. 80CrV2 combines high edge holding with excellent chip resistance and can often be found in hard use knives. The blade features an S-Grind. A convex ground edge provides high performance chopping with lots of strength. From there, it moves into a concave as the blade moves toward the spine. This technique lightens the overall weight without sacrificing strength and provides excellent food release. This combination ensures a high performing workhorse with virtually no resistance cutting through foods that would otherwise stick or wedge. Because this knife is made from carbon steels, we recommend using camellia oil to oil the blade and natural wood handle.
Redwood handle scales and black burlap Micarta bolsters are secured to the full tang using brass pins. Red fiber spacers will help the natural wood adjust to humidity and temperature changes from the kitchen. Natural Micarta liners nicely complement the warm tones in the redwood. Both the blade and full tang are distal tapered, creating a perfectly balanced knife. The contoured handle fills out your hand and is extremely comfortable. This is a knife you won't want to put down!
