This high performance fillet knife is sure to become a 'goto' knife -- both in the kitchen and when out fishing. This beautiful knife is the right tool for two key tasks — boning and filleting. When boning, the narrow, sharp blade gets in close to the bone, making it easy to separate meat from bone. The extremely sharp edge even cuts through fibrous material with ease. It’s perfect for trimming the silverskin from a tenderloin or even making your own cutlets. The narrow blade reduces drag as you cut against the meat so cutting is fast and easy. When it comes to filleting fish, the blade's length is just right to glide through the body of the fish, quickly removing bones and skin.
The blade is hand ground 14C28N stainless steel made by Sandvik in Sweden. This provides the perfect compromise between long edge retention and a slight flexibility for getting into more delicate areas such as when removing pin bones from fish. 14C28N is tough, chip, resistant, highly corrosive resistant, and has good edge holding. The blade features a hand rubbed satin finish. Dave's mark is on the left side.
The handle is a beautiful section of stabilized black palm secured to the full tang using six pins. Fiber liners will help the natural wood adjust to humidity and temperature changes in the kitchen. Satin finished 303 stainless steel bolsters finish the handle. The coke bottle shaped handle tapers toward the front to provide an exceptionally comfortable grip for filleting.
