Description: Prior to starting Sea Rose Knifeworks, Sasha Rosenfeld was a professional cook in Seattle for 15 years. When he made the move from chef de cuisine to stay-at-home dad and part time prep cook, he began taking blacksmithing classing and forged his first kitchen knives in his backyard while he daughter was napping. In the fall of 2018, Rosenfeld decided to step away from professional kitchens for good and opened Sea Rose Knifeworks.
This knife will be a perfect 'go to' knife in the kitchen. The 7 inch blade is a perfect size and shape to get most any task done exceptionally well. A gentle arc to the blade's edge makes this a perfect knife for both a rocking chop and a forward slice. Whether chopping onions, slicing tomatoes, mincing parsley, or portioning and slicing meats, this elegant chef's knife has you covered!
The blade was hand forged from Sasha's own damascus steel, combining 1080 and 15n20 carbon steels with a 1084 carbon steel core into a high performance, dramatic cutting tool. A Fujiwara-inspired finger notch encourages a pinch grip for greater control. The blade has tremendous, thin geometry and will effortless slice and chop. The spine and choil are nicely rounded for comfort. Because this knife is made from carbon steels, we recommend using camellia oil to oil the blade and natural wood handle.
The handle is hand contoured stabilized masur birch. This mid-brown toned wood has exceptionally dramatic figure. Alternating stainless and black fiber spacers will help the wood adjust to humidity and temperature changes in the kitchen. The handle is finished with a 416 stainless steel bolster.
