Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, results in edge holding that is far beyond other knives. This is a knife that will astonish you with its lightness, maneuverability and stunning good looks.
This knife will be a perfect 'go to' knife in the kitchen. The 6 inch blade is a perfect size and shape to get most any task done exceptionally well. It is a nice size for the chef that prefers a smaller, more easy to control knife. A gentle arc to the blade's edge makes this a perfect knife for both a rocking chop and a forward slice. Whether chopping onions, slicing tomatoes, mincing parsley, or portioning and slicing meats, this elegant chef's knife is sure to become your 'go-to' knife in the kitchen.
The blade is forged from Burke's own random pattern damascus combining a thousand layers of 1084 and 15n20 carbon steels. The dense, convoluted pattern will have you staring at the blade for hours. Both the spine and choil are nicely rounded for comfort. Because this knife is made from carbon steel we recommend using camellia oil to oil the blade and natural wood handle.
The contoured handle is red morrell burl. Red morrell (Eucalyptus longicornisis) is an extremely rare exotic wood endemic to Western Australia. The swirling figure of the burl nicely complements the damascus blade. Both the spine and tang are distal tapered, providing excellent balance in hand. The handle is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the end of the handle. The polished 416 stainless steel bolsters are dovetailed perfectly to the scales and encourage a comfortable pinch grip.
