Description: This exceptional chef's knife is the work of Argentinian knifemaker Pablo Untroib. Pablo lives in Buenos Aires. He specializes in knives for professional and amateur cooks as well as making outdoor knives.
Like a chef's knife, the santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works especially well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the standard chef's knife, a santoku is very easy to maneuver—even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all.
The blade is Pablo's stainless ToonMascus. The high performance 14C28N stainless steel blade features intricate, detailed cartoons laser engraved into the surface. The result is a captivating, low maintenance blade. The blade has a perfect arc for a rocking chop.
Guayubira wood (Patagonula Americana) handle scales are set on the full tang for strength and durability. Guayubira is native to Argentina. It is an extremely dense, durable wood with tremendous beauty. Its name is derived from gua (tree in Guarani) and yevi (meaning elastic). It is perhaps no surprise that it will easily hold up to the heavy demands of either a home or commercial kitchen. The domed handle is nicely contoured so that it fits most hands.
The knife is accompanied by a veg tanned leather sheath hand built and hand tooled by Pancho Elizalde.
This is an exceptionally light, very well balanced chef's knife that can be used for hours without fatigue. It is a perfect choice for both home and commercial chefs.
