This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited as a general purpose chef's knife. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The blade is 52100 carbon steel with a satin finish. 52100 is considered by many knifemakers and knife users to be among the best steels (if not the best!) used in modern knifemaking. It combines exceptional edge holding with durability and ease of sharpening. Many thermal cycles and normalizing steps ensure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability. Because this knife is made from carbon steel, we recommend using camellia oil to prevent rust and for oiling the natural wood handle.
The coke bottle shaped handle is blue/yellow dyed and stabilized maple burl, secured to the full tang for strength and durability. The front of the handle is sculpted to accommodate a comfortable pinch grip. The knife is feels great in the hand and balances perfectly right in front of the handle. This knife is sure to become a kitchen favorite - you won't want to put it down!
