Description: This exceptional chef's knife was hand forged by Journeyman Smith Mak Kelsay in Chattanooga, Tennessee. Kelsay began his blacksmithing journey in the spring of 2017 when he joined the Choo Choo Forge and immediately began their green coal program. He was immediately addicted. Since then, he has learned from some of the best in the industry -- folks like Lyle Wynn, Clay Spencer, Mike Lammare, Mark Aspery, Pete Brasspenninx and many others. In June, 2021, he was honored to become an ABS journeyman smith. Kelsay specializes in chef's knives -- knowing that his knives will be used each day in home and commercial kitchens. This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited as a general purpose chef's knife. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
This 8-3/4 inch chef's knife is hand forged 52100 carbon steel and features forge finish along the top of the blade. Many knife users and knifemakers feel that 52100 is among the highest performing (if not the best!) steels currently used to make knives today. The spine and choil are nicely rounded for comfort. A convex edge provides a resilient, long lasting edge. Because this knife is made from carbon steel, we recommend using camellia oil to prevent rust and for oiling the natural wood handle.
The handle is presentation grade ringed gidgee (Acacia cambagei). Gidgee is a member of the acacia family (same family as koa). It grows in arid regions of Australia resulting in dense, wood with a hardness similar to Arizona desert ironwood. The slow-growing gidgee may hang on for hundreds of years and produces one of Australia’s hardest and most durable timbers. The handle is inspired by the Japanese octagonal handle and will be equally comfortable for left or right-handed users. A bolster combining nickel silver spacer and black G-10 completes the handle. The handle tapers toward the front to accommodate a comfortable pinch grip. This nimble knife is perfect for either the professional or home cook. Like other knives, this knife should not be put in the dishwasher.
To protect the knife during transportation a black leather sheath is included.
