Description: The love for gastronomy, quality and construction mixes together in a somewhat magical way to give Stelios Christos Drakopoulos (also known as Dikristo) a life purpose: one of the first 100% Greek handmade chef's knives. This exquisite Dikristo chef's knife was made by Drakopoulos Stelios. A native of Athens Greece, Stelios was born in 1983. He is a home cook, food lover, and knifemaker. We were extremely impressed with this latest batch of knives from him! This chef's knife gets its name from the Greek spirit Corus.
The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is a general purpose chef's knife. The long blade is needed for the slicing motion required to cut meats and the tall profile provides plenty of finger clearance over a cutting board. This gyuto is a perfect general purpose chef's knife to grab whether chopping onions, mincing parsley, or slicing meat.
The 8-3/4" san mai blade combines an Aogami Super core with stainless steel cladding. This gives the performance of a high quality carbon steel but with easier care and maintenance. At 64 Hrc, this knife will have exceptional edge holding! The hammer finish along the top of the blade helps facilitate food release when cutting foods. The spine and choil are nicely rounded for comfort.
The Japanese-inspired octagonal handle is dyed and stabilized maple burl. The handle is finished with a bolster made from onyx TruStone. The ambidextrous handle is lightweight and very comfortable. This is sure to become a favorite in your kitchen!
A custom storage bag with brass buckles and Dikristo's mark is included to safely store the knife.
