Description: This exceptional chef's knife is the work of Argentinian knifemaker Pablo Untroib. Pablo lives in Buenos Aires. He specializes in knives for professional and amateur cooks as well as making outdoor knives.
The Paring Knife is the second of the most essential kitchen knives every cook should have on hand. After a chef's knife, you need a paring knife. It's perfect for any paring task, from hulling strawberries to peeling an apple. It also handles jobs such as chopping small foods, like garlic cloves or ginger, against a cutting board. The 3.8-inch blade is the perfect length for most jobs.
The blade is O2 carbon steel. At Hrc 60, it will have a keen, long lasting edge. An elegant forced patina provides limited rust resistance and helps you get comfortable working with carbon steels. Because this knife is made from carbon steel, we recommend camellia oil to avoid rust and oxidation.
South American Urunday (Astronium balansae) wood handle scales are set on the full tang for strength and durability. They are seated with three hidden bolt rivets. Urunday is a deciduous, flowering tree native to Argentina and Paraguay. It is very strong and dense, making it a nice choice for a hard use chef's knife. It has a nice light reddish-brown tone. The domed handle is nicely contoured so that it fits most hands.
The knife is accompanied by a veg tanned leather sheath custom built and tooled by Pancho Elizalde.
