This high performance chef's knife is a perfect choice as a primary choice in the kitchen. The long, deep-bellied blade is great slicing and chopping vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. The slightly flatter cutting edge shows the influence of Japanese kitchen knives and makes this knife especially effective and nimble. At 5-1/3 inches, this is a great size for the cook who prefers a shorter, more easily controlled knife. From chopping to slicing, this will be your go-to knife.
The blade is hand ground Bohler N690 and features a hand rubbed satin finish. It takes an incredibly sharp edge and holds onto it. Increased toughness gives it better resistance to edge chipping. Dave's touchmark is on the left side of the blade.
Like the blade, the handle is inspired by Japanese knives. The octagonal shape is extremely comfortable. By using stabilized maple burl wood, Skinner ensures this knife will hold up well to the high demands of either a professional or home kitchen. A black G-10 spacer and nickel silver bolster seal the handle from water. Like other knives, this knife should not be put in the dishwasher.
