This chef knife is lightweight, has excellent cutting geometry, and a nice tall heel for plenty of height over the cutting board.
This high performance chef's knife is a perfect choice as a primary choice in the kitchen. The long, deep-bellied blade is great slicing and chopping vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. This knife, with its deep belly combines a German-influenced shape with a nimble Japanese edge geometry. From chopping to slicing, this will be your go-to knife.
The blade is hand ground Bohler N690 and features a hand rubbed satin finish. It takes an incredibly sharp edge and holds onto it. Increased toughness gives it better resistance to edge chipping. The blade features an S-Grind. A convex ground edge provides high performance chopping with lots of strength. From there, it moves into a hollow as the blade moves toward the spine. This technique lightens the overall weight without sacrificing strength. The combination ensures a high performing workhorse with less resistance cutting through foods that would otherwise stick or wedge. Both the spine and choil are nicely rounded for comfort. Dave's mark is on the left side of the blade.
The handle combines stabilized spalted maple with aluminum-formica laminate spacers. This further lightens the handle and prevents water from getting into the handle. The faceted handle is carved to accommodate a comfortable pinch grip. This is sure to become a favorite in your kitchen! Like other knives, this knife should not be put in the dishwasher.
