Description: This exceptional Kiritsuke chef's knife is the work of Kentucky bladesmith Joshua Fisher. Joshua is a full time knifemaker and a Forged in Fire champion (season 8, episode 23). He started making knives when he was 22 years old. He liked the idea of being able to take raw materials and make a functional tool that can be used every day. Joshua was honored to work with Wounded Warrior Project teaching veterans how to make knives, tomahawks, and other tools -- providing a unique experience and outlet for the veterans.
This K-Tip chef's knife will be an exceptional multipurpose chef's knife. From mincing and chopping garlic or chives, to preparing full meals, this will be your go-to knife! The blade height gives plenty of clearance over a cutting board, while the 8-/14 inch blade has plenty reach.
The blade is hand ground 8670 carbon steel. This steel is used extensively in the lumber industry for making large circular saw blades. The nickel adds toughness and there is enough carbon for good edge holding. The blade features a shinogi grind -- a transition in the grind provides exceptional food release. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
The Japanese-inspired handle is octagonal. It is red bushwillow (Combretum apiculatum). This warm toned South African wood has a tremendous swirling figure. The traditional Japanese handle provides a sure, comfortable grip, even when used for hours at a time.
Exceptional work throughout!
