Description: This exceptional vegetable cleaver is the work of Kentucky bladesmith Joshua Fisher. Joshua is a full time knifemaker and a Forged in Fire champion (season 8, episode 23). He started making knives when he was 22 years old. He liked the idea of being able to take raw materials and make a functional tool that can be used every day. Joshua was honored to work with Wounded Warrior Project teaching veterans how to make knives, tomahawks, and other tools -- providing a unique experience and outlet for the veterans.
This nakiri vegetable cleaver is a beautiful multi-tasking blade — the long edge is perfect for chopping and slicing vegetables as well as portioning meats and other proteins. The edge is double beveled, like a Western knife. While it may look like a meat cleaver, it isn't (you'll want a heavier cleaver for breaking bones). Instead, vegetable cleavers are used like a chef's knife. It is adept at processing quantities of vegetables for stir fry and thinly slicing meats. Once you use it, you'll find yourself reaching for this precision knife more and more often.
The hard Shiro2 carbon steel core is laminated between softer stainless steel sides. This technique results in a knife that has the performance of carbon steel (a keen, long lasting edge and ease of sharpening) without many of the maintenance issues (rusting and oxidation). Because only the carbon steel cutting edge is exposed, the knife is far less likely to rust. Because the core of this knife is forged from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
Mustard Micarta handle scales are set on the full tang for strength and durability. The Micarta provides a durable, dramatic grip that doesn't easily become slippery. Loveless style rivets secure the handle in place.
