Description: This exceptional Kiritsuke slicing knife is the work of Kentucky bladesmith Joshua Fisher. Joshua is a full time knifemaker and a Forged in Fire champion (season 8, episode 23). He started making knives when he was 22 years old. He liked the idea of being able to take raw materials and make a functional tool that can be used every day. Joshua was honored to work with Wounded Warrior Project teaching veterans how to make knives, tomahawks, and other tools -- providing a unique experience and outlet for the veterans.
This K-Tip sujihiki slicer/carving knife is a great choice for slicing and portioning meats and fish due to the thin, long blade. Extremely sharp, suji are also well suited to preparing sushi and sashimi as well as slicing roasts and carving birds. The extended blade length allows you to slice with one long stroke, instead of sliding the knife back and forth in a sawing motion. The result is a superior, clean cut.
The blade is hand ground 8670 carbon steel. This steel is used extensively in the lumber industry for making large circular saw blades. The nickel adds toughness and there is enough carbon for good edge holding. The blade features a shinogi grind -- a transition in the grind provides exceptional food release. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
The Japanese-inspired handle is octagonal. It is stabilized curly magnolia wood. This light toned wood has a dramatic curl. The traditional Japanese handle provides a sure, comfortable grip, even when used for hours at a time.
