Description: This exceptional utility knife is the work of Kentucky bladesmith Joshua Fisher. Joshua is a full time knifemaker and a Forged in Fire champion (season 8, episode 23). He started making knives when he was 22 years old. He liked the idea of being able to take raw materials and make a functional tool that can be used every day. Joshua was honored to work with Wounded Warrior Project teaching veterans how to make knives, tomahawks, and other tools -- providing a unique experience and outlet for the veterans.
A utility knife is between a chef’s knife and a paring knife. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The blade is hand ground 8670 carbon steel. This steel is used extensively in the lumber industry for making large circular saw blades. The nickel adds toughness and there is enough carbon for good edge holding. The blade features a shinogi grind -- a transition in the grind provides exceptional food release. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
Burlap Micarta handle scales are set on the full tang for strength and durability. Micarta is extremely durable and offers a fantastic non-slip grip. Loveless style rivets secure the handle in place. The contoured handle will remain comfortable even after hours of use.
