Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steels, result in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This high performance slicing knife is perfect for portioning meats and fish as well as slicing vegetables. The thinner profile makes it make a cleaner, more precise cut, while there is just enough belly for a rocking chop.
The blade was hand forged in a technique known as san mai (three layers). Undulating, brightly colored damascus (forged from brass, copper and stainless steel) surround a VG-10W stainless steel core. VG-10W achieves excellent wear resistance and chip resistance at 60-61 Hrc. The effect created by the mokume gane sides is extremely captivating!
The bolster is 416 stainless steel, pinned and soldered to the blade for strength and durability. The handle is contoured Arizona desert ironwood. It is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the end of the handle.
The knife has perfect balance and feels exceptional in the hand. It will be among the best knives you will ever use to cut.
