Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment and forging techniques result in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This high performance chef's knife is a perfect choice as a primary choice in the kitchen. The long, deep-bellied blade is great slicing and chopping vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. This knife, with its deep belly combines a German-influenced shape with a nimble Japanese edge geometry. From chopping to slicing, this will be your go-to knife.
Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly. The heat treatment followed the formulas developed Bill Burke in conjunction with Mastersmith Ed Fowler. This technique, combined with Bill's choice of steel, creates ensures some of the sharpest and most long lasting edges found anywhere. The blade is differentially heat treated. This results in a soft, supportive spine and an extremely hard, long lasting edge. A rounded spine and choil ensure the knife will be comfortable even after hours of use.
The handle is stabilized exhibition grade spalted curly maple set to the full tang with three Corby rivets. This stabilized wood holds up beautifully to the heavy demands of either a home or professional kitchen. The handle is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the end of the handle. Like other knives, this knife should not be put in the dishwasher.
Exceptional work throughout!
