Description: Brian Hanson is a bladesmith located in Washington State. He worked for over a decade as a fine dining chef in various Seattle restaurants, but during Covid he made the decision to change careers and start working as a bladesmith. He now makes high performance kitchen knives that he hopes fellow chefs will love to use both at home and professionally in the kitchen.
Paring knives are a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The blade is hand forged 52100 carbon steel. 52100 is considered by many knifemakers and knife users to be among the best steels (if not the best!) used in modern knifemaking. Brian's touchmark is on the right side of the blade. Because this knife is forged from carbon steel we recommend using camellia oil to avoid rust and oxidation. The top of the blade features a forge finish. The grind is satin finished.
Walnut wood handle scales are set on the full tang, ensuring strength and durability. The thin profiled handle feels very nimble and easy to control. Like other knives, this knife should not go in the dishwasher.
