Description: South African knifemaker David Hoehler specializes in chef's knives. Given that he worked in some of the best kitchens in South Africa for nine years, it is no surprise that he brings a unique understanding the chef's primary tool.
Like a chef's knife, the nakiri is a multipurpose knife. It is a traditional Japanese knife ideal for chopping fruits and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. Nakiri make fast, accurate work of thin slicing and chopping.
The 6-2/3 inch blade is high performing 12C27 stainless steel. This Sandvik stainless steel was specifically developed as a blade steel. It is a very fine grained alloy, ensuring a keen, long lasting edge. At Hrc 60, it offers a good combination of corrosion resistance, edge stability, wear resistance, and strength. The blade is meticulously flat ground for precise slicing and has a razor sharp edge. A hand rubbed satin finish lends an heirloom quality to the knife.
The handle is dyed and stabilized maple burl. Two stainless hidden bolt rivets set the scales to the full tang. This elegant knife will hold up exceptionally well to the demands of either a home or commercial kitchen.
Exceptional work throughout! This is a knife you'll have a hard time putting down.
