Description: Oregon bladesmith Joe Edson specializes in straight razors and kitchen knives. As such, it's not surprising that his high performing chef's knives are razor sharp! I have watched Joe's work develop over the last couple of years and the knives he is creating are truly exquisite! This beautiful chef knife could easily because a family heirloom that will last for generations to come!
Joe began by forging a bar of san mai steel. Takefu V-Toku2 carbon steel is tremendously high performing, and takes an extremely keen edge. Stainless steel surrounds the carbon steel core to provide easier maintenance and care. Because this knife's core is forged from carbon steel, we recommend using camellia oil to avoid rust. The top of the blade is forge finished. The blade features an S-Grind. A convex ground edge provides high performance chopping with lots of strength. From there, it moves into a hollow as the blade moves toward the spine. This technique lightens the overall weight without sacrificing strength. The combination ensures a high performing workhorse with less resistance cutting through foods that would otherwise stick or wedge. Both the spine and choil are nicely rounded for comfort. Joe's mark is on the left side of the blade.
The handle is ringed gidgee (Acacia cambagei). Gidgee is an exceptional wood for knife handles and is considered to be one of Australia's most beautiful timbers. It has tremendous stability even when exposed to fluctuations in humidity and temperature. It is among the densest woods in the world and has a beautiful curl similar to Hawaiian koa. The handle is finished with a starry night G-carta bolster shaped to nicely accommodate a comfortable pinch grip.
