Description: South Africa bladesmith Dave Skinner brings an exceptional level of work to his knives. Whether the knife is designed for the kitchen, for use out in the field, or for a collector, Skinner brings a refined eye and tremendous skill at the forge to his knives.
The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is a general purpose chef's knife. The long blade is needed for the slicing motion required to cut meats and the tall profile provides plenty of finger clearance over a cutting board. This gyuto is a perfect general purpose chef's knife to grab whether chopping onions, mincing parsley, or slicing meat.
The 7-1/4 inch blade features a hand forged VG-10 stainless steel core (hagane). This is surrounded by many layers of high contrast damascus. This time consuming process creates a knife with outstanding edge holding and beauty without the brittleness of many other high performing steels.
The frame-constructed handle is inspired the Japanese ambidextrous octagonal handle. The stabilized and dyed maple burl has a dramatic figure. A faux ivory spacer and nickel silver bolster seal the handle from water. Like other knives, this knife should not be put in the dishwasher.
