Description: Francisco Vaz lives in Rio Grande, Brazil. He has been making knives since 2017 and is a master of chef's knives. Each knife that he creates is a handmade, high-performance work of art. He grinds all of his knives by hand without the use of jigs and believes heavily in making his knives by hand.
A bunka is a Japanese general purpose chef's knife. Like the santoku, a bunka is a knife of many talents that can easily handle all the basic kitchen cutting tasks. Slightly shorter than the standard chef's knife, the bunka is light, agile, and very easy to maneuver. There's plenty belly curve to enable rocking cuts, which just adds to the bunka's versatility.
The blade is hand forged 14C28N stainless steel made by Sandvik in Sweden. 14C28N is tough, chip, resistant, highly corrosion-resistant, and maintains good edge retention. A hammer finish will help facilitate effortless food release.
The Japanese-inspired octagonal handle combines kingwood with Brazilian ebony. A true rosewood, kingwood (Dalbergia Cearensis) is harvested from a small tree that is restricted to a small area in Brazil. Extremely rare, kingwood was famous for being used in the finest furniture in the world during the 17th century. It was often only sold to royalty. Brazilian ebony gets its name for its almost jet black color. The ambidextrous handle is very comfortable and accommodates a pinch grip. Like other kitchen knives, this knife should not be put in a dishwasher.
