Description: Journeyman Smith Erik Fritz has been working on chef's knives the last few years and his knives are amazing! His friendship with Mastersmiths Bill Burke and Wade Colter has been a real boon. Bill has worked with Erik to best understand the ideal geometry for chef's knives and has shared his coveted heat treating techniques for an ultra-high performance blade.
The 3-3/4 inch blade is hand forged 52100 carbon steel with a hand rubbed satin finish. A differential heat treatment and triple quench result in a keen, long lasting edge, with strength and durability for the spine. Many makers and users feel that 52100 carbon steel is among the best, if not the best steel used on knives! Because this knife is carbon steel, we recommend using camellia oil to avoid rust and oxidation.
Hand contoured cocobolo handle scales are brought to a high polish. Cocobolo's extreme density and hardness translate to its incredible durability, making it resistant to dents, scratches, warping, rot, and insect damage. When you consider the fact that it is a beautiful wood as well, it’s the perfect choice for high end knives. The scales are perfectly fit to satin finished 416 stainless steel bolsters. This is a knife you won't want to put down!
