Description: Journeyman Smith Erik Fritz has been working on chef's knives the last few years and his knives are been amazing! His friendship with Mastersmiths Bill Burke and Wade Colter has been a real boon. Bill has worked with Erik to best understand the ideal geometry for chef's knives and has shared his coveted heat treating techniques for an ultra-high performance blade.
The 8-1/2 inch blade is hand forged 80CrV2 carbon steel. 80CrV2 provides a keen, long lasting edge with excellent chip resistance. A differential heat treatment just adds to the durability. It is a perfect choice for a workhorse chef’s knife. Because this knife is carbon steel, we recommend using camellia oil to avoid rust and oxidation. A convex grind assists food release. The spine is nicely rounded for comfortable grip -- even when used for hours at a time. This knife is perfectly balanced and is not one that you'll want to put down.
Double dyed and stabilized maple burl handle scales are set on the full tang for strength and durability. The wood handle is exceptionally dramatic. It has been nicely carved so as to swell at the palm, move into a slimmer waist, and swell again as it approaches the end of the handle. A 416 stainless steel bolster seals the front of the handle.
